Snickers Sensational Slice, GF, DF*, RSF
Updated: 3 days ago

I've always had a sweet tooth and a profound love of chocolate, particularly just before my period.
So I've learnt that its good for me to have a healthier option in the freezer for those times when you choose to indulge!
This chocolate and peanut slice is refined sugar free (RSF), and is probably one of the best I've had.
Its around 230 calories per piece, so keep that in your calorie budget mind! But its so rich you won't need more than one piece....mostly!
Makes: 24 slices (230 calories)
Prep time: 10 minutes
Cook time: 20 minutes. Setting time: 3 hours
Ingredients
Base:
2 cups pitted dates
2 cups peanuts raw
1 Tbsp dark cocoa powder or use cacao but its not as rich a chocolate taste.
Center layer:
1/2 cup coconut oil
1/2 cup maple syrup
1/2 cup crunchy peanut butter
Top layer:
Dark chocolate around 100 gm. * Using this topping means the slice is no longer RSF. It is delicious without too!
Method
Line a 20 cm by 20 cm baking tin with baking paper
To make the base, add the dates to a small jug and cover with boiling water. Soak for 10 minutes.
Place the raw peanuts in a preheated oven on 150 degrees. Cook until slightly brown, around 10 minutes, but keep an eye on them!
Empty the water from the dates, then place dates in the food processor. Add the peanuts and cocoa, then blitz until the peanuts have become finely chopped and the mixture is starting to ball together. Stop and scrape the sides down as you go.
Press the mixture into the lined tray with a wet spoon or with wet hands and spread to the edges to create an even layer. Place in the freezer while you make the centre layer.
For the centre layer, place a medium saucepan on low heat. Add the coconut oil and maple syrup and melt together.
Add the peanut butter then increase the heat slightly until the mixture starts to bubble. Cook for a few minutes, stirring, to allow the mixture to caramelise.
Turn off the element and pour the mixture over the base, spread to the edges and put it back in the freezer for an hour to firm up.
For the topping simply melt the chocolate. I used a double boiler. Put straight over the top of the Snickers base. You can drizzle it if you want to use less chocolate. Otherwise spread across and to the edges.
Put back in the freezer for a total of 3 hours at least. I then cut it into portions and store in a container in the freezer as its better frozen.
Enjoy it! Really taste the rich, chocolate caramel and peanuts. The richness and mouthfeel of slice. It is a delight!
