Sleepy Loaf...a nutritional recipe for the insomniacs

For some people with insomnia, having a small amount of complex carbohydrates 2 hours before bed may support sleep onset. This is thought to be due to increased availability of tryptophan, an amino acid involved in serotonin and melatonin production.
This loaf brings together several nutrient-dense, sleep-supportive foods in one simple recipe.

Prep time: 15 minutes
Cooking time: 1 hour
Ingredients
1 tbsp ground linseed (flaxseed), soaked in 3 tbsp cold water (or chia seeds)
2½ cups rolled oats
1½ tsp baking powder
1½ tsp ground cinnamon
½ tsp baking soda
½ tsp salt
4 medium ripe bananas, mashed
⅓ cup plant-based milk (or regular milk)
⅓ cup brown sugar (or coconut sugar, or honey - which is sweeter)
3 tbsp neutral oil (grapeseed or light olive oil)
2 tsp pure vanilla extract
2 tbsp pumpkin seeds
½ cup frozen blueberries, tart cherries, or goji berries
⅓ cup chopped walnuts
Optional: 1–2 tsp chai spice mix (adds warmth and digestion support)
Method
Preheat oven to 170°C (regular bake). Line a small–medium loaf tin with baking paper.
Blend oats in a food processor until a coarse flour forms (about 3–5 minutes). Transfer to a bowl and mix with baking powder, cinnamon, baking soda, salt, and optional chai spice (ask me for this recipe!).
In a separate bowl, combine mashed bananas, milk, sugar, oil, and vanilla. Add to dry ingredients along with soaked linseed and mix well. Fold through pumpkin seeds, berries, and walnuts.
Pour into tin and sprinkle extra walnuts on top. If you don't like walnuts you can grind these up with the oats and then you won't even notice them in the loaf!
Bake for ~1 hour, or until a skewer comes out clean.
Cool for 10 minutes in the tin, then transfer to a rack. Best sliced once cooled or chilled, though delicious warm and rustic.
I find this recipe is not quite sweet enough for some people so slice it up, put some butter or coconut oil on top (especially if warm or toasted) and then drizzle a tsp of natural maple syrup on top or some jam or honey
. Delicious!!
Store in fridge for 2-3 days. Also great to freeze in 3 day portions.
Sleep-supportive nutrition notes (why this combination works)
This loaf combines several nutrients that are commonly associated with sleep physiology:
Pumpkin seeds – one of the richest plant sources of tryptophan by weight, also high in zinc, which supports serotonin metabolism
Oats – complex carbohydrates that may support tryptophan transport into the brain
Bananas – contain small amounts of tryptophan plus potassium and magnesium, which support muscle relaxation and sleep
Walnuts – a natural source of melatonin and magnesium. Apparently walnuts contain the highest plant-based melatonin concentration
Tart cherries & goji berries – plant sources containing melatonin and polyphenols
Dried figs (optional add-in or topping) – contain small amounts of tryptophan and minerals that support neurotransmitter production.
This recipe is also fibre rich, which of supports healthy, regular bowel motions and its also prebiotic rich food for the gut microbiome!
👉 Some studies on tart cherry juice have shown improvements in sleep duration (including increases of ~30–40 minutes in certain populations), though effects vary between individuals.

Calories: ~193 kcal, average women needs around 1600 kcal per day.
Carbohydrates: ~24.3 g
Protein: ~3.7 g
Fat: ~9.0 g
Fibre: ~3.1 g
Tryptophan: ~67 mg - excellent huh!
Micronutrients (approx.):
Calcium: 17 mg
Iron: 0.75 mg
Magnesium: 51 mg - most anxious people need 300-400 mg per day until anxiety resolves, so this is a good amount to add to your sleep reserves - as magnesium keeps you asleep.
Potassium: 175 mg
Phosphorus: 100 mg
Vitamin C: 2.6 mg
Vitamin E: 0.14 mg
Zinc: 0.65 mg
